BOTTLE
GOURD / DOODHI KA HALWA
I
can just go on talking about my love for Doodhi ka Halwa.i’m so crazy about the
Halwa my mom makes that she even sends it to India all the way from Saudi
Arabia just for me :)
I wanted to post this recipe for a while now but I just could not find good bottle gourds in my area.
Finally,I found some yesterday and the first thing I
did was to make the Halwa.
Do
try this recipe it’s definetly a keeper!!
INGREDIENTS:
(Serves 7)
2
(700 grams)bottle gourds
4
cloves
2
cinnamom sticks
4
green cardamoms
150
grams mava/khoya
2
cups sugar
1
tsp cardamom powder
A
cup of assorted chopped nuts(almonds,pistachios,cahews,goden raisins and
charoli/chironji)
1
cup ghee/oil
METHOD-
Grate
the bottle gourds in a food processor and Start the cooking process immediately
otherwise the grated bottle gourd starts to discolor.
In
a vessel,on medium flame,heat the ghee and add the cloves,green cardamom and
cinnamom sticks.
Sauté
for a minute then add the grated gourds.
Cover
and cook for 15 minites.Keep stirring at intervals so that it does not get
burnt.
When
the bottle gourd gets 3/4th done add the sugar.
After
adding the sugar the mixture starts secreating water so keep cooking till the
water evaporates.
Then
add the khoya and the chopped nuts.
Stir
for 2 mins then add the cardamom powder.
Keep
stirring in cut and fold method till the halwa starts secreating ghee.
The
halwa is ready!!
