Today being chocolate day,I knew I had to celebrate chocolate. So,my morning started with browsing for chocolate recipes and I finaled on double chocolate chip cookies.Baking cookies is not my biggest forte but however today I wanted to give it a shot.Luck was on my side as these were the best cookies I have ever eaten or baked. They are dense, sinfully chocolaty and are best eaten with a glass of milk.Do try this recipe it is not going to disappoint you..ever.

INGREDIENTS:
1 cup softened salted butter
1¼ cup brown sugar
2 large eggs
½ cup cocoa powder sifted
2¼ cups all-purpose flour
½  tsp coffee powder
1 tsp baking powder
1 cup milk chocolate chips

METHOD:
Preheat the oven to 180 C.

Line baking sheet with parchment paper.

Combine the softened butter and brown sugar and beat with an electric mixer on medium-high speed for  2-3 minutes.

Blend in the eggs one at a time.

Mix in the sifted cocoa powder.

Then, add the flour, baking powder and coffee powder and mix on low speed till well incorporated.

Fold in the chocolate chips.

Knead the cookie dough for a minute so that all the ingredients are well incorporated.

Divide the dough into 20 medium sized cookies.

Roll each portion of dough into a ball and flatten slightly into a disc.

Place on the prepared baking sheets, a few inches apart.

Bake for 15-20 minutes depending on the size.

Let the cookies rest for a minute in the baking tray, then transfer to a wire rack to cool completely.
